Why Anti-Staling Baking Powder?
Starch contributes to many desired characteristics of the cake. When baked, the starch will absorb water, swell and gelatinise; an essential process for setting structure, texture and mouthfeel. Staling of the cake is mainly caused by starch retrogradation. Starch retrogradation is when the amylopectin in starch granules recrystallises, causing the cake to go hard/firm.
